The Wagyu hanging tenderloin, also known to some as the Wagyu hanger loin, is not only unique in flavor but also rare. There is only one hanging tender per Wagyu cow, making it even rarer than the popular Wagyu filet mignon. The Wagyu beef hanging tender is intensely flavorful and, due to the breed's distinctive characteristics, has a subtle marbling. Known as Herzzapfen in Austria and Onglet in France, this special cut comes from the diaphragmatic pillar, the lumbar part of the diaphragm.
